念舊日於香港的茶餐廳，家譜財產性器橫飛。百亂中一杯奶茶、一客多士，是根本地與地區節拍形成強烈對比。
奶茶之香，在於小啖時先入嘴時的奶味、接上是奶與茶間逃不了的混沌、加上入到喉嚨之後在舌上陰雲不散的茶味，缺一則成不了『奶茶』。一乾而盡，是混沌的深化，是草草的過渡，結果就只有把『事情』幹完的份兒，了無情趣。
多士更是複雜。多士的脆度，牛油的多寡，奶油的品牌選擇，能夠完全表達一個人的 lifestyle。多士就像是結了婚的人一樣，一切都是選擇與平衡。因方便而失衡了，不論家庭、工作、靈命都不能幸免於難。
浮沉於這樣的執著之中，也是我的輕鬆。
而下是我星期二回家後，自製一年多沒有食過的奶油多。
1. 壽星公煉奶 - 傳統的象徵

4. 其實是二十年前見著小學畢業、但給我錢過來美國讀書的父親所做過的事

5. 是慢慢的，快只是劣質的表現。

6.牛油要用 Block(磚) 和 Salted 的，Margarin (人做牛油) 絕對不能。

7. 2-3mm 就夠了，正正中中。

8. 容許牛油在爐內容掉

9. 加上奶油

10. 吃

。
輕鬆過後，不知何時，又回到了實在。
看著，聽著，一切的無奈；解決的方法可能就是 ” I don’t know ” 的態度吧。
